4 skinned, boned chicken breasts
Flour for coating
1 egg, beaten
1/2 cup of milk
2 cups of Ritz cracker crumbs (or bread crumbs)
Cooking oil for deep frying
Bake chicken breasts in 350-degree oven until tender (1/2 to 1
hour). Cool chicken and cut into large bite-size pieces.
Shortly before serving, heat the oil to 375 degrees. Roll the
chicken pieces in flour, dip them into the milk and egg mixture,
and then roll them in the cracker crumbs. Fry until golden (about
4 minutes). Since the frying time is so brief, the chicken is not
greasy. Drain on paper towels.
Makes four servings. If Ritz is too rich, use bread crumbs.
