Our correspondent in Burnham, Pennsylvania is also a great cook. This recipe will illustrate how much ovens and fish go together.
|
1 pound of haddock (halibut or cod work, too)
1 tablespoon of butter or margarine
1 teaspoon of garlic salt
1/4 teaspoon of oregano
1/4 teaspoon of thyme
A dash of pepper
A bay leaf
1 cup of onion slices
1/2 to 3/4 cup of cream
Place fish in a baking dish. Dot it with butter or margarine, sprinkle it with
the seasonings, and add the bay leaf. Arrange onion slices throughout, and
pour the cream all over it.
Bake, uncovered, at 350 degrees for 40 minutes. Squeeze a lemon wedge all
over it when serving. Garnish with parsley, or sprinkle it with parsley flakes.
Serves four, or better yet, two of you can have leftovers tomorrow. Hmm.
