Whipped Fruit Dessert
Combine the lemon juice and 1/3 cup of sugar in a small heavy
saucepan. Cook over high heat, stirring until the sugar caramelizes.
Carefully add 1/4 cup of hot water. Pour this evenly into the bottom of a
two-quart ring mold.

Combine 1 quart of cream and 1 cup of sugar in another saucepan and
heat until the sugar dissolves. In a third pan, sprinkle gelatin powder over
cold buttermilk, and allow it to soften for 5 minutes. Then gently heat the
buttermilk until the gelatin dissolves and remove from heat. Combine the
cream and buttermilk mixtures, and add vanilla extract. Pour into the ring
mold and refrigerate overnight.

To serve, remove it from the mold onto a serving platter. Garnish and fill
it with fresh berries.
