Brunch occurs sometime between Breakfast and Lunch, and this is both in one sandwich.

2 eggs
2 slices of bread, buttered or unbuttered
Homemade or white Italian
3 or 4 strips of bacon
Salt and pepper to taste
Optional ingredients:
Sliced American cheese
or shredded cheddar
or roasted sweet peppers
or sliced tomato and onion
Fry 3 or 4 strips of bacon well but not too crisp and set them aside.
Lower the skillet heat and pour in 2 scrambled eggs. Fry the eggs without
stirring and slowly enough so that they don’t brown. Cut the egg â
€œpattyâ€� in thirds to flip it and cook the other side.
When the egg is cooked, make a sandwich by folding the egg so that it fits
onto a slice of bread (homemade or white Italian bread works best for
this). While the egg is still hot, add the bacon. Top with the other bread
slice. Mmm.
You can add ingredients such as cheese, roasted sweet peppers, or
tomato and onion. Zap it in the microwave to take the chill off of cold
ingredients.
This is both breakfast and lunch. so we don’t recommend eating this
way all the time. It’s great, though, when you’re hungry.
