People often give zucchinis away in season, and now you have a great use for them.

The Bakery Chef presents ... Zucchini Bread at The Fatted Café

3 eggs
1 cup of oil (you can substitute Apple Sauce)
3 teaspoons of vanilla
2 cups of sugar
2 packed cups of shredded Zucchini
2 cups of flour
1 teaspoon of baking soda
1 teaspoon of salt
1/4 teaspoon of baking powder
3 teaspoons of cinnamon
1/2 cup raisins or nuts, optional
Preheat the oven at 350 degrees. Beat 3 eggs until foamy. Add 1
cup of oil or apple sauce, the vanilla and sugar. Combine the
flour, baking soda, baking powder, salt and cinnamon.
Mix the dry ingredients with the sugar mixture, and then add the
shredded Zucchini (a little extra Zucchini makes it even moister).
You can add 1/2 cup or raisins or nuts.
Bake in 2 greased loaf pans at 350 degrees 50 minutes to 1 hour.
